Mexican Caviar Dip
Basically put all the following ingredients into a big container and let it sit for at least a few hours. Try and chop all ingredients as small as possible for best results. I've thought about throwing it all into a food processor and seeing what I come up with - have yet to attempt. Best dipped using Tostitos Scoops!
Mixture:
1 can rinsed and drained black eyed peas
1 can rinsed and drained black beans
2 cans white shoepeg corn
1 finely chopped small red pepper
1 finely chopped small yellow pepper
1 finely chopped small purple onion
1 finely chopped bunch of green onions
1 jar chopped jalapeno peppers
Dressing:
1/2 cup virgin olive oil, 3/4 cup balsamic vinaigrette dressing, 1/2 cup sugar. Put this in a pan and heat it on low-medium until the sugar melts.... When it's melted pour it over the mixture and stir.
Add 3 or 4 good shakes of Mrs. Dash garlic and herb combo and then salt and pepper. I think also added some cayenne pepper for that added "kick"! Plus, it's good for your heart!
